Today was our first of two days at the UBC Apple Fest and we had so much fun. Aside from the simply fabulous weather we meet heaps of new people and lots of old friends stopped by as well. In fact it was so busy I never actually got to see, let alone buy, any “real” apples. But Keri from Craft Caravan kept the kids busy making fun bookmark crafts and the whole kids’ area was full of apple-themed fun.

And I did promise my apple crumble recipe on Facebook, but it’s too long to type up there so I thought I’d share it here. I suppose this is technically an apple crisp, but I was brought up calling in crumble so that’s how I think of it:
Annemarie’s Apple Crumble/Crisp
Ingredients:
- 1 teaspoon ground cinnamon
- 8 large apples (c. 4 lbs), peeled, cored and cut into 1/2-inch slices
- 2 tablespoons fresh lemon juice
- 2 tsp grated lemon rind (optional)
- 1/4 cup sugar
- 3/4 cup cold unsalted butter, cut into pieces
- 1 cup light-brown sugar
- 1 cup all-purpose flour
- 1 cup rolled oats (not quick cooking)
- 1/2 tsp salt
Instructions:
- Preheat the oven to 375°F.
- Toss the apples with lemon juice, sugar and cinnamon in a 3.2qt (3L) Casserole Dish (we use our Corningware one) or a 9×13 inch baking dish.
- For topping, combine the butter, sugar, flour, oats and salt in a bowl. Work together with fingertips, two knives or a pasty blender until mixture resembles coarse meal. Sprinkle topping evenly over the apples. Bake in center of the oven for 45 minutes to 1 hour or until bubbly and the apples are tender. Let cool slightly. Serve warm (or my fave: rewarmed for breakfast with a bit of milk).
And here’s a photo of our famous prize pram, I especially like the shadow from the water bottle used to anchor the tent. It adds a certain je ne sais quoi.
