Want to be more eco-friendly by using up every little bit of your pumpkin? Here’s an easy recipe for toasting your pumpkin seeds once you’ve finished carving your ghoulish gourd.

Sure, a big part of Halloween’s appeal is sweet treats but why not offset some of that spooky, sugary junk by toasting your own pumpkin seeds? Heck, if you involve your tots in the process they may even request them for a snack instead of another mini chocolate bar. Pumpkin seeds are packed with zinc, magnesium, manganese, iron, copper and protein and you can use them in salads, muffins and bread.

Once your pumpkin is significantly scary you can move onto the seeds. Start by rinsing them in water to remove the stringy, sticky stuff and then dry them off. In a bowl toss them with a little coarse salt or experiment with seasonings like  pumpkin pie spice, Cajun spices, garlic salt and more.  You can either cook them in a lightly oiled skillet over medium heat on your stove top, it’ll only take about five minutes to get them nice and toasty brown or  spread them in a single layer on  a lightly oiled cookie sheet and bake in a 250 degree oven for about an  hour, stirring every 20 minutes.

    We roast our pumpkin seeds in the oven. They’re one of our favourite seasonal treats. And they’re really good for you to boot! :)
