a sprinkle a day

It’s been hot, hot, hot here this week so we’re always on the lookout for ways to keep the kids cool. I think few things beat running through the sprinkler, so we set it up for the kids on the weekend. M gave it a pass after her first run through, but Miss L kept at it til she was blue in the face and her teeth were chattering. It was a great reminder about how the simplest things can be the most fun.
She also accessorized her activities with rhubarb leaves, so I used that as an excuse to share the recipe for rhubarb compote that I’ve been making and eating on yogurt for breakfast each morning. It’s below the pix:



This rhubarb compote recipe is inspired by this one from the 100 Mile Diet on the Food Network:
- 1 lb rhubarb sliced into 1″ slices
- 1/2 cup strawberries, hulled and sliced
- 1 cup apple, peeled, cored and cut into chunks
- 1/3 – 1/2 cup honey
- splash of orange juice or zest and juice of one orange
Combine all the ingredients in a saucepan, just cover with water, bring to boil and then simmer til ingredients are soft – about 1/2 an hour.
When it’s simmering you can also add a bit of chopped fresh ginger or a sprinkle of cloves for flavour. Chopped dates will add a bit more sweetness without adding sugar as well.
When it’s cooked store it in an airtight container in the fridge, it’ll stay good for about a week.
Enjoy it on yogurt with a sprinkle of granola on top, porridge/cream of wheat or ice cream. So yummy!

That rhubarb compote sounds delish. The first strawberries are ripe in my garden, and I love the way they taste when paired with rhubarb. Yum!
